Bakeware comes in so many materials, it’s easy to be confused about what type is best. The short answer is it depends on what you’re baking. Materials and even the color of the pan can impact baking time because of how they react to heat, experts say.Here’s an overview of bakeware types:
- Aluminum: Aluminum bakeware is popular because it transfers heat well. It can react to the acidity in certain foods, though, turning the bakeware black, so use glass or ceramic bakeware for that blueberry pie or crisp.
- Stainless steel: While the heat properties vary depending on quality, this type of bakeware doesn’t rust or tarnish and is easy to clean.
- Silicone: This is a great insulator, meaning it doesn’t conduct heat well — one reason why silicone baking mats are so popular. While you won’t burn cookies or cakes using silicone bakeware, these goods also need a longer baking time to brown just right.
- Glass and ceramic: Glass and ceramic bakeware retain heat, making them ideal for casseroles and other foods that you want to keep warm from oven to table. That said, glass and ceramic don’t conduct heat well, so pies and other goods in these pans take longer to brown on the bottom.
- Cast-iron: A well-seasoned cast-iron pan is like having a nonstick pan that can go straight from the stovetop into the oven.
